What should I do if my honey crystallizes (granulation, sugaring)?

Almost all honey will crystallize after extended storage. Honey can be liquified by placing the container in warm water, or by microwaving the honey in small portions (1 cup) in a microwave-safe container. Microwave on high for approximately 2 minutes, stirring every 30 seconds until the crystals dissolve. Do not boil or scorch honey.

How should honey be stored?
Honey should be kept in dry storage at room temperature.


Does it spoil?
If kept in an airtight container, honey keeps indefinitely.


Can young children eat honey?

Honey should not be fed to infants under one year of age. Honey is a safe and wholesome food for children and adults.


Can I substitute honey for sugar?
For best results, use recipes developed for using honey. To substitute honey for sugar in recipes, start by substituting up to half of the sugar called for. With a little experimentation, honey can replace all the sugar in some recipes. Because of its high fructose content, honey has a higher sweetening power than sugar. This means you can use less honey than sugar to achieve the desired sweetness.


What about baking with honey?

When baking with honey, remember the following:
* Reduce any liquid called for by 1/4 cup for each cup of honey used.
* Add 1/2 teaspoon baking soda for each cup of honey used.
* Reduce oven temperature by 25° F to prevent over-browning. When measuring honey, coat the measuring cup with non-stick cooking spray or vegetable oil before adding the honey. The honey will slide right out.


What does 'certified organic' mean?

Many products claim to be Organic but are not necessarily certified Organic.

Certified Organic products carry the Organic seal of certifying bodies such as USDA and EU. The seal on the label guarantees that the product is organic. It is authentic and conforms to strict standards laid down by Organic certifying bodies.

Bees make honey by converting nectar into simple sugars that are easily and quickly absorbed into the bloodstream. Thus, honey gives you instant energy and helps in digestive disorders.
